Whiskey Cream Sauce

Ingredients

  • 4 tablespoons butter
  • 1/2 cup diced onions
  • 1/2 cup whiskey
  • 1/2 cup beef stock or broth
  • Dash of salt
  • Freshly ground black pepper
  • 1/4 to 1/2 cup heavy cream

Directions

Cook the onions in the 3 tablespoons butter in a skillet over medium heat for a few minutes. When the onions are brown, turn off the burner temporarily so you won’t ignite your kitchen. Or yourself.

Pour in the whiskey. As soon as it evaporates, turn the burner on medium-high heat and pour in the beef stock. Add salt and freshly ground black pepper to taste, then allow the mixture to bubble up and reduce by half.

Whisk in the remaining tablespoon of butter, then reduce the heat to low. Whisk in 1/4 cup to 1/2 cup cream, according to your taste. Allow the sauce to simmer and thicken for a few minutes.

Serve with beef, baby!

Homemade Ranch Dressing

Ingredients

  • 1 clove garlic
  • 1/4 teaspoon kosher salt
  • 1 cup real mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup Italian flat-leaf parsley leaves, minced
  • 2 tablespoons fresh dill, minced
  • 1 tablespoon minced fresh chives
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • Dash hot sauce
  • 1/4 to 1/2 cup buttermilk (as needed for desired consistency)

Directions

Mince the garlic with a knife and then sprinkle on the salt and mash it into a paste with a fork.

In a bowl, combine the garlic paste, mayonnaise, sour cream, parsley, dill, chives, Worcestershire sauce, black pepper, vinegar, paprika, cayenne and hot sauce. Add the buttermilk to desired consistency and mix to combine, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thinning with more buttermilk if needed.

Five Minute Sauce

INGREDIENTS

  • 4 tablespoons extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • Dried chili peppers, crushed
  • 1 (28-ounce) can peeled plum tomatoes, pureed
  • Salt
  • 3 fresh basil leaves, torn

  • DIRECTIONS

    Heat the olive oil in a saucepan and add the onion, garlic, and chili peppers. Gently fry ingredients together, about 5 minutes.

    Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.

    Season with salt, to taste. Add basil leaves at the very end.

Ingredients

  • 2 tablespoons unsalted butter
  • 3 tablespoons extra-virgin olive oil
  • 1 large carrot, finely chopped
  • 1 onion, finely chopped
  • 1 large celery stalk, finely chopped
  • 2 dried chili peppers, crushed
  • Sprig fresh rosemary
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 cup white wine
  • 3 cups tomato sauce or La Salsa di 5 Minuti, recipe follows
  • 3 basil leaves, torn
  • Salt
